Pearl’s Zingy Southwest Salad

Serves 2

Ingredients

  • 1 can (15 oz) black beans, rinsed & drained
  • 2 cups frozen corn, thawed
  • 1 red bell pepper, chopped
  • ¼ red onion, chopped
  • 1½ tsp ground cumin
  • 1 lime, juiced or 3 T lime juice
  • 2 T olive oil

Directions

  1. Mix in a bowl
  2. Eat your damn veggies

Notes

  • You can use any type of frozen corn (sweet white corn, yellow corn etc.)
  • Rollover red onion
