Ingredients
- 1 can (15 oz) black beans, rinsed & drained
- 2 cups frozen corn, thawed
- 1 red bell pepper, chopped
- ¼ red onion, chopped
- 1½ tsp ground cumin
- 1 lime, juiced or 3 T lime juice
- 2 T olive oil
Directions
- Mix in a bowl
- Eat your damn veggies
Notes
- You can use any type of frozen corn (sweet white corn, yellow corn etc.)
- Rollover red onion
